Tailgater Tomato Avocado Salad


This summer and fall proved to be an excellent tomato growing season in my area.  The beautiful specimens are all off my vines now, but I had a few left in cool storage.  What a better way to enjoy them than a creamy, slightly spicy, fresh salad.  I may call this a tomato salad but I could also call it a salsa or pico de gallo if I diced my ingredients.  All labeling aside, this salad is amazing and it does go well with a tortilla chip… and football! 

El Diablo Jalapeno Mustard was the inspiration behind this recipe.  The salad is full of fresh flavors and creamy textures but it is this special mustard that truly gives it a kick in that “secret-ingredient” kind of way.

Even if you don’t have any tomatoes left in your garden, grab some at the supermarket or farmers market and give this recipe a try at your next tailgater or football party.  Not only is it easy to make with many ingredients you may already have in your kitchen but it travels well.  As a salad along side a juicy steak, topped on a gourmet hot dog or as an appetizer served with chips, Tailgater Tomato Avocado Salad, is a must try. Mustard2LR

Tailgater Tomato Avocado Salad

  • 4 tomatoes
  • 2 avocados
  • 1/3 cup chopped fresh cilantro
  • 1/3 cup queso fresco, crumbled
  • 1/4 olive or avocado oil
  • 2 cloves garlic, minced
  • 2 teaspoons white vinegar
  • 1 heaping tablespoon El Diablo Jalapeno Mustard
  • 1 teaspoon salt
  • 1 teaspoon agave or honey

For a salad presentation, chop tomato and avocado into bite sized chunks.  For a salsa, topping or chip dip, dice tomato and avocado.  In a mixing bowl, combine oil, garlic, vinegar, mustard, salt and agave or honey until smooth.  Add tomato, avocado, cilantro and queso fresco to the bowl and gently toss.  Serve with additional cilantro and queso fresco as a garnish if desired.Mustard1LR
