Sweet-Hot Smokey Nuts

  • 4 cups mixed nuts (unsalted & raw if possible)
  • 1 egg white
  • 1/3 cup brown sugar
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt (if using unsalted nuts)
  • 1/4 teaspoon cayenne pepper (add more if you want hotter nuts)

In a medium bowl, whip egg white until frothy.  Add sugar, vanilla, cinnamon, pepper and salt.  Stir until thoroughly combined.  Toss nuts into bowl and coat thoroughly. Spread nuts evenly on a pan with holes or a smoker-rack screen.  Preheat smoker to 220º.  Cook 50-60 minutes, stirring occasionally.  Cool and continue stirring occasionally to break up larger chunks.
