Smokey Rum Soaked Pineapple
- 1/2 pineapple, peeled and halved
- 1/4 cup rum
- Pinch of sea salt
- Mint leaves for garnish, if desired
This recipe works best with fresh pineapple but can also be made using drained, canned pineapple. Slice pineapple into 1/2 inch segments. Place pineapple in a zip-lock bag with rum and pinch of sea salt. Marinate overnight. Place on smoker racks. Smoke 20-30 minutes between 200º and 250º. Garnish with mint if desired. Serve warm or cold.
