Naturally gluten-free, Monster Cookies are not only a great treat but an easy way to add healthy fiber and nuts into your diet. Here’s my “seedy” version. See below for additional add in ideas.
Seed-Filled Monster Cookies
- 3 eggs
- 2 teaspoons vanilla
- 1 cup brown sugar
- 1/2 cup white sugar
- 2 teaspoons baking soda
- 2/3 cup butter, softened
- 1 cup almond butter
- 1/2 cup peanut butter
- 4 1/2 cups oatmeal
- 1/2 cup raw sunflower seeds
- 1/2 cup raw pumpkin seeds
- 1/2 cup flax meal
- 1/2 cup coconut
- 1/2 cup mini-dark chocolate chips
In a large mixing bowl, mix all ingredients until fully combined. Drop by rounded tablespoons on to baking sheet. Bake in a preheated 350 degree oven 7-9 minutes. Taking cookies out a bit earlier will make them chewy, baking until browned will produce a crunchy cookie.
These cookies can lean on the healthy add-ins like chopped nuts, protein powder, chia seeds, raisins, chopped dates or other fruits or other things can be added for a special dessert – M&M’s, white chocolate or butterscotch chips, toffee bits, marshmallows.
