There are lots of sweet sweets this time of year. These cookies are nice to have on hand for gluten free guests or for people looking for something that is a little on the healthy side. I make this same recipe with bananas in place of the pumpkin and can then leave the sugar out making for a great breakfast cookie. Also, up to 1 cup raisins, chopped dates or chopped nuts can be added.
Gluten-Free Oatmeal Pumpkin Spice Cookies
- 2 1/2 cups pumpkin
- 3/4 cup brown sugar
- 1/3 cup melted butter
- 1 egg
- 2 teaspoons vanilla
- 1 teaspoon cinnamon
- 1 teaspoon ginger
- 1/2 teaspoon cloves
- 1/4 teaspoon nutmeg
- 1/8 teaspoon salt
- 2 cups oatmeal (ground or whole)
In a medium bowl, cream together pumpkin, sugar and butter. Add remaining ingredients and stir until thoroughly combined. Drop by rounded teaspoon on to a non-stick or greased baking sheet. Press cookies down to flatten slightly. Bake in a preheated 350º oven, 15-18 minutes.
