World’s Best Hot Dogs & Bratwurst

From the Recipe Book: Grill It! – With More Smoke Flavor

2 pounds hot dogs or bratwurst
3 cans or bottles beer

Cut bratwurst into 1”-2” pieces. Make shallow slits in a circular fashion down the length of each hot dot. Place hot dogs and/or bratwurst in a large stock pot. Add beer until hot dogs and/or bratwurst are covered. Cook at medium heat until hot dogs are plump, about 15-20 minutes. Place on medium hot grill and cook until heated throughout. Hot dogs and bratwurst can be returned to a shallow beer bath on the grill for holding if needed. Serve with Pickled Pepper Relish and/or Sweet Onion Relish.

Pickled Pepper Relish
1 green bell pepper, diced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 orange bell pepper, diced
2 cloves garlic, thinly sliced
1/4 cup extra virgin olive oil
1/4 cup rice vinegar
1 tablespoon sugar
1 teaspoon fresh oregano or 1/2 teaspoon dried
1 teaspoon fresh rosemary or 1/2 teaspoon dried, optional
1/2 teaspoon salt
1/2 teaspoon black pepper

Blanche peppers in boiling water 1 minute. Drain well. In a large bowl, combine remaining ingredients and gently toss. Marinate, refrigerated, at least 12 hours for optimal flavor.

Sweet Onion Relish
2 cups sweet onion, finely chopped
3 stalks celery, diced
1/3 cup sugar
2 tablespoons cider vinegar
1 teaspoon salt
1/2 teaspoon celery seed
1/4 teaspoon white pepper
1 2-ounce jar diced pimento

In a medium bowl, mix all ingredients until thoroughly combined. Marinate, refrigerated at least 12 hours for optimal flavor.
