Peas In A Pod Soup

Based on an old family recipe, this soup can be served thick as a side dish or thinned down as a soup. The combination of the wholesome taste of traditional split-pea soup with the fresh taste of garden peas is delicious.

6 slices bacon, choppedpeasoup
2 cups onion, diced
1/3 cup green pea flour
3 cups chicken or vegetable broth
1-2 cups peas, fresh or frozen
Salt and pepper to taste

 

In a large soup pot, fry bacon until browned. Add onions and sauté until caramelized, 10-20 minutes. In a separate bowl combine broth with green pea flour, whisk until smooth. Add mixture to soup pot, bring to a low boil then lower heat and simmer 25-30 minutes. Add fresh or frozen peas during the last 10 minutes of cooking. Thin soup with additional broth or water if needed. Salt and pepper to taste.
