“Let’s grow quinoa!” my mother enthusiastically stated last spring. She has a greenhouse and can’t wait to get seeds sprouting once the chill of winter has passed. I am usually up for attempting to grow about anything, gardening for me most of the time is either a huge disappointment or a happy mistake. Growing quinoa was interesting… the story soon to be documented. But first, let’s fast forward… it was a long journey but it produced something YUMMY!
Coconut Quinoa Granola
- 1/4 cup honey
- 2 tablespoons coconut oil
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup rolled oats
- 1/2 cup raw quinoa
- 1/3 cup raw pumpkin seeds
- 1/2 cup chopped raw almonds
- 2 tablespoons chia seeds, optional
- 1/2 cup unsweetened coconut
- 1/4 cup chopped figs or raisins
Melt coconut oil with honey in the microwave or in a saucepan. Stir in cinnamon and salt. In a medium bowl, mix all dry ingredients except for coconut and dried fruit. Spread granola mixture on a baking sheet. Bake in a preheated 350 degree oven, 10 minutes. Remove from oven and stir in coconut and fruit. Bake an additional 5 minutes or until coconut has browned slightly. Remove from oven, let cool and store in an airtight container.
