Venison Camp Chili

Whatever wild game you have on hand, ground or cut into cubes, will be enhanced with this flavorful chili. Make in a Dutch oven in camp or make-ahead at home for an easy warm up over the coals or simply put the ingredients in a slow-cooker for an easy meal.Venison Chili IngredientsLR

INGREDIENTS:

  • 1 pound venison, ground or cubed
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, sliced or minced
  • 1 tablespoon chili powder
  • 1 tablespoon unsweetened cocoa powder
  • 2 teaspoons cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 1 6-ounce can tomato paste
  • 2 cups water
  • 2 15-ounce cans black beans, drained

DIRECTIONS:

In a Dutch oven, heat olive oil and sauté venison, onions and garlic on medium-high heat until meat is browned.  Add spices and continue cooking 2 minutes.  Add tomato paste and cook 2 minutes.  Add water and bring to a boil.  Add black beans and simmer an additional 10-20 minutes.  Garnish with crushed tortilla chips, sour cream, avocado and cheddar cheese, if desired.

MAKE-AHEAD TIPS: To simplify meal preparation in camp, make this chili at home ahead of time and refrigerate or freeze before reheating. Foil Dutch oven liners work great for freezing and reheating chili, soups and stews. They also allow for fast and easy clean up.

Cooking for a crowd at home or in camp is easy with the Can Cooker. For small groups, use the Can Cooker, Jr. but for larger groups check out the full size model. My review of the Can Cooker, Jr. discusses many ways to use this handy piece of equipment.

One of the easiest meals to prepare is this layered Can Cooker Camp Lunch.Can Cooker JRLR

INGREDIENTS:

  • 2 cups water or chicken broth
  • 1 onion, sliced
  • 12-15 baby carrots
  • 6 cloves garlic
  • 6 medium potatoes
  • 1/2 head cabbage, chopped
  • 3 tablespoons seasoning of choice
  • 1 can pineapple chunks with juice
  • 3-4 uncooked bratwurst sausage

Place rack in the bottom of the Can Cooker, Jr. Add ingredients in the order they are listed. Seal lid on Can Cooker, Jr. Place on high heat until Can Cooker, Jr. begins to steam. Reduce to medium-high heat (adjust heat to keep continuous steam coming from the steam vent). Cook 45 minutes to 1 hour. Pour contents into a large pan. Plum Clafoutis

When my 13 year old son went on his first bear hunt, the last thing I expected was to start getting texts about picking plums and making Clafouti. I didn’t even know he knew what Clafouti was! After a day of bear hunting, Kazden was hanging out with Alex, the cook, at Boulder Creek Outfitters in a remote part of Idaho. 

They found this recipe for Cherry Clafoutis on the internet and decided to substitute  plums for cherries.

What a joy to get these pictures and realize that, even without me around, my son has a passion for food and discovering local culinary treasures.

Fun with Fennel

When your kiddo asks if they can pick out a vegetable at the grocery store or Farmer’s Market, your answer should always be, “Yes!” Getting kids to try new things can be a challenge and getting them to try new vegetables can sometimes be impossible. Seeing a variety of beautiful vegetable presentations piques the interest of kids. With so many colors, shapes, textures and flavors; produce should be as exciting for kids as it is good for them. On a recent trip to a new Natural Grocers in my area, my youngest son asked if we could make something with fennel for dinner.Fennel Fun 1LR

Usually, I make most of my recipes up using things I have on hand but today I took to google to find a fennel salad recipe. Thanks to Elise at Simply Recipes, I found this Fennel Slaw with Mint Vinaigrette. It was a hit with the entire family. The vinaigrette tamed the licorice flavor of the fennel, giving it a pleasant flavor profile. Most of us ate it as is, but my mom added it to a salami and cheese sandwich. Next time I make this, I will make extra so I can heap it on a sandwich or burger of my own.Fennel Fun 2LR

Using the more tender base of the fennel for the salad, I decided to roast the upper portion. The simple roasting method I use with almost every vegetable is just a drizzle of olive oil and a sprinkle of salt and pepper. Roasted at 370º for 20 minutes, the fennel came out slightly caramelized with a mellow flavor.

Sunday in Seattle

When my teenage sons asked me to take them to PAX Prime in Seattle, I wasn’t worried about how I would spend my time while they were at the convention. Eating is always at the top of my list when I am in this delicious city. Being the great sports they are, they were up for whatever food adventures may come their way. We hung out on Sunday before we went our separate ways the next day.Seattle Sunday1LR

If you find yourself in Seattle on a Sunday, you must make the Fremont Sunday Market one of your stops. Not only are there some great street-eats but the fun, friendly atmosphere shows off a great side of Seattle.

Our tasty stops included Sweet Bumpas Ice Cream and BeanFish. My oldest son and I decided the Coconut Lime Ice Cream was one of the best ice creams we have EVER had! Seattle Sunday 5LR

After a nice walk along the river and a visit to The Indoor Sun Shoppe, we were just about ready to eat again.

Eating Seattle – IFBC 2015 Scouting Trip

ifbc2015_300x250The International Food Bloggers Conference in Seattle is coming up this month. Yesterday, I had the pleasure of taking two friends on day long food tour of that food-centric city. I like to think of it as my “Scouting Seattle” trip. In just a few weeks I will be back for my third IFBC and I can’t wait! With speakers like noted author, Kathleen Flinn and renowned food photographer Christopher Testani, I am looking forward to learning something new.

8 Hours of Eating @ Pike Place Market

When a Seattle food writer recommends one of her favorite bites, you make it your first stop. Mee Sum Bakery, was at the top of Naomi Tomky’s list. “Get the Curry Beef Hom Bow,” she suggested. Julie and I arrived around 10 a.m. to find no line but the Hom Bow we wanted needed five more minutes in the oven. It was the perfect excuse to pop in to The Confectional to share a miniature gluten-free cheesecake. The actual cheesecake wasn’t too sweet and had a mild lemon flavor with a perfectly creamy texture. The buttery shortbread cookie crust was one of the best gluten-free items I have ever tasted. Soon the Curry Beef Hom Bow were ready. Biting into the hot bun, the slightly sweet flakiness of the top balanced out the flavorful curry on the inside. The bun was soft and pillowy. We also tried a Sesame Ball/Bun which is a pastry made from glutinous rice flour, coated with sesame seeds and filled with red bean paste.LRsesame

Inside the market, Britt’s Pickles was next. Not only is this an amazing place to try several kinds of pickles, kimchi, and get a shot of pickle juice, but you can get great information on fermentation. If you are lucky enough to be there when it is in stock, pick up some black garlic; it will rock your culinary world.LRPickle juice

When trying to pack in as many tastes of a place as possible it is important to take some breaks. One of my favorite places to browse is DeLaurenti Food & Wine. I always plan at least an hour to comb the shelves looking for interesting foods and flavors from all over the globe. There is always something new, and this place offers endless inspiration.De Lau1

It’s nice to plan at least one sit-down meal when food touring. Since neither Julie or Hanna had ever had Vietnamese Pho, Pho Mililani was our restaurant of choice. You know it is good if it is crowded and Pho Mililani was packed. The staff was welcoming as they shuffled us in and found us a temporary seat. “Order now and there will be a table ready when your food is up,” suggested our hostess. She was right and we enjoyed steaming bowls of both chicken and shrimp Pho, with many “Mmmm’s” and “Ahhh’s.”LRShrimp Pho

More shopping ensued up a few blocks at Nordstrom Rack, Ross and TJ Maxx. So nice to have the trifecta of discount stores so close together. With all that walking, Julie needed better shoes. With her new Converse all laced up, she was ready for more samples. It was time for something sweet and I knew just the place, Cinnamon Works. Everything looks so good here, it’s tough to make a decision. Julie settled on a gluten-free Monster Cookie, and I went with my classic favorite, Molasses Cookie. Both were top-notch. Right across the street, we headed in to Sur La Table to browse. As we were munching on bites of our cookies, Julie mentioned it was about time for coffee. Like magic, an associate showed up to demo an espresso machine. Tiny Pumpkin Lattes in hand, we continued to happily browse the beautiful store.LRcookie

If looking for an energy boost at any time during the day, stop by The Juice Emporium for a fresh pressed Veggie Mix. The gals here serve any combination of juice to order and it always comes with a friendly smile.LRjuice emporium

After a stop to watch cheese in the making at Beecher’s, we joined the line at Piroshky, Piroshky. To keep things moving, an employee is at the ready, handing eager customers a menu so they can be ready to order once they make it to the counter. We enjoyed a hot Mushroom & Potato Piroshky. LRapple piroshkyOne more kitchen store to go, we ducked into Kitchen Basics. This store is bursting at the seams with unique, fun kitchen essentials.LRkitchen

Time for a break, we climbed a few flights of stairs to Storyville Coffee. This place is an oasis in the middle of the Pike Place Market hubbub. Cozied up to the fire, we lounged on leather chairs and recharged our phones as well as our feet. One of the best Mocha’s we have EVER had!storyvilleLR

And then it was time for my favorite stop, Oriental Food Mart. Delicious, authentic, Filipino cuisine is served up with humor and sass. I always ask Lyla for a little bit of everything. She always replies, “Do you trust me?” Trust her, this is melt-in-your-mouth food. Don’t pass up the Salmon Sinigang, even if it is on a day when she sneaks a fish head into it. If you have never tasted this tangy tamarind based soup, you are in for a treat.LRfil1LRfil2

Right around the corner, back on the street, find Mr. D’s Greek Delicacies. The sesame paste based, Halva, is a must-try sweet. At only $1.50, it’s a deal and easy to share.LRhalva

Don’t miss the flying fish antics at the entrance to Pike Place Market, but more importantly, don’t miss a visit to MarketSpice for all your tea and spice needs.LRspicemarket

With only a few minutes to spare, we made it to the highly rated Daily Dozen Doughnut Company. They had already sold out and closed early but were sweet enough to offer us a few morsels of powdered sugar donut goodness. Note to self: Get here earlier next time!LRdonut

Our food tour was coming to an end. The rest of our families had been at PAX Prime all day and were ready to meet up at the monorail to head back to our hotel. One more stop, and we will be there. We hadn’t had any gelato yet! Ten samples later, at Gelatiamo, we settled on Orange Cream, Mojito, Maple Pecan, Salted Almond Chocolate, Rice and Hazelnut gelato. My favorites of them all were the Mojito and the Maple Pecan. I am still thinking of my samples of Cinnamon and Cappuccino and will be having those next time I am in town. What a perfectly sweet way to end a perfectly awesome day!LRgelato

Smoked Dark Chocolate

The first time I saw the new Smoke Chief in action, my mind reeled at the possibilities. As an avid hot-smoker, the technique of cold-smoking never really interested me as it seemed rather complicated. With the Smoke Chief, cold-smoking isn’t only easy, it’s addictive.

First, I cold-smoked cheese, then fruit. It was only a matter of time before chocolate got tossed on the grill. Starting with the most basic, I tried a milk chocolate bar and a dark chocolate bar. After just 20 minutes of smoke, there was a notable difference in the flavor of the chocolate. Outwardly smokey at first, then creamy chocolate with a pleasant but bold aftertaste. The dark chocolate was by far a favorite.

 

Off to the grocery store I went to buy more chocolate… Mounds, Almond Joy, Cookies & Cream, Butterfinger, Baby Ruth, Crunch, Mr. Goodbar, Kit Kat, Reese’s Peanut Butter Cups (and the Easter eggs) and more varieties of plain chocolate bars.

Almost every candy bar was enhanced with a bit of smoke flavor. The favorite of many was the Reese’s Peanut Butter Cups as they took on a smokiness that was reminiscent of a Thai peanut sauce dish.

Smoking chocolate is easy. Simply place chocolate on racks and fire up some smoke. Use a cold-smoke generator or get your pucks or pellets smoking and place them in a closed grill without heat.

Smoked chocolate flavors deepen after smoking. Place smoked chocolate in a sealed container to enhance smoked flavor. Eat as is, or shave over ice cream or coffee drinks. Smoked dark chocolate is a fantastic addition to brownies and chocolate cookies.

Sweet-Hot Smokey Nuts

Sweet-Hot Smokey Nuts

  • 4 cups mixed nuts (unsalted & raw if possible)
  • 1 egg white
  • 1/3 cup brown sugar
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt (if using unsalted nuts)
  • 1/4 teaspoon cayenne pepper (add more if you want hotter nuts)

In a medium bowl, whip egg white until frothy.  Add sugar, vanilla, cinnamon, pepper and salt.  Stir until thoroughly combined.  Toss nuts into bowl and coat thoroughly. Spread nuts evenly on a pan with holes or a smoker-rack screen.  Preheat smoker to 220º.  Cook 50-60 minutes, stirring occasionally.  Cool and continue stirring occasionally to break up larger chunks.

Smokey Rum Soaked Pineapple

Smokey Rum Soaked Pineapple

  • 1/2 pineapple, peeled and halved
  • 1/4 cup rum
  • Pinch of sea salt
  • Mint leaves for garnish, if desired

This recipe works best with fresh pineapple but can also be made using drained, canned pineapple.  Slice pineapple into 1/2 inch segments.  Place pineapple in a zip-lock bag with rum and pinch of sea salt.  Marinate overnight.  Place on smoker racks. Smoke 20-30 minutes between 200º and 250º. Garnish with mint if desired. Serve warm or cold.
